I spend a lot of time making recipes, and then misplacing the paper I wrote them on.  I will attempt to share the good ones here – but for the really good ones, you can buy the finished product on my etsy page.

My dream is to own a chocolate shop (well, sweets shop really, with chocolate, candy, some pastries and maybe some coffee).  While I’m figuring out how to make that happen, I’m spending a lot of time experimenting with recipes.

Most of what I post will be in grams or oz – and not volumetric.  Kitchen scales are a great tool to have around, and for candy and pastry, exactness matters.  It’s kind of like in statistics – the smaller the quantity the more variance matters.
