Southern Biscuits (My Granny’s recipe)

Biscuits

Technically speaking, this is not a sweet recipe, but it is very good with honey-butter on it, or with a bit of sugar, and some strawberries.

This makes about 14 biscuits

1.0 Biscuits

Ingredients:
  • 250 grams  _________________ Flour (all purpose, ~2 Cups)
  • 1-2 TBSP ____________________ Baking Powder (BP, she never measured)
  • 14 tsp _________________ Baking Soda (BS)
  • 14 tsp _________________ salt
  • 14 Cup _________________ butter (cold, cut into small cubes. and yes, only half a stick)
  • 1 Cup ____________________ buttermilk (or milk + 1 tsp vinegar)
  • 1 TBSP ____________________ sugar
Instructions:
  • Pre-heat the oven to 425°
  • Measure the flour
  • Put the flour, BS, BP, sugar, and salt in a food processor, and add the cold butter.
  • Pulse till it is sandy.  (You can do this by hand with a pastry cutter, but even my grandma had a food processor as soon as she could get one)
  • Put the buttermilk in, and pulse till it forms a loose dough.
  • Turn out onto plastic wrap, and form into a ball.
  • Wrap it up and chill for a few minutes, if you have time.  This helps keep it flakey.
  • On a floured surface, quickly and gently roll out the dough, to about half an inch thickness.
  • Using a biscuit cutter (aka a round cookie cutter), about 2 inches in diameter, cut out the biscuits.
  • Push straight down, don’t turn the cutter.
  • Place biscuits about an inch apart, on a sheet parchment lined sheet pan.
  • Re-roll out the scrap dough, and cut.
  • Brush the tops of the biscuits with melted butter.
  • Bake biscuits for 15-20 minutes
